Grapefruit and Carrot Juice

Happy new year everyone!

I thought I’d kickstart the first day of 2014 with a refreshing and nourishing glass of grapefruit and carrot juice. This juice is low in sugar and loaded with nutrients. I added a bit of ginger to give it a punch and some extra goodness.

You can also add a small sprig of mint or as recommended by the Boyfriend, a pinch of sugar or stevia. Personally, I find the carrots do a good enough job at mellowing the sharpness and bitterness of the grapefruit.

If you’re not a fan of grapefruit, simply swap grapefruit for three to four apples or oranges.

Serves: 2

2 pink grapefruit
4 medium carrots
1″ chunk ginger (optional)
a sprig of mint (optional)
sweetener (optional)

1. Peel grapefruit and cut into quarters. Chop carrots into a manageable size for your juicer.
2. Toss everything into the juicer and juice away (you could also use a blender and sieve the product). Best served straightaway, with ice.
